2. Squash
Nutrient-rich squash is one of the best veggies for versatility making it a great choice for a meal any time of the day. Pureed pumpkin frozen in ice cube trays can later be added to smoothies, pasta dishes, soups or any quick bread recipes. High in B vitamins, squash is an excellent choice for boosting your immune system before cold and fly season hits. Every part of the vegetable is edible, especially the seeds which when seasoned and baked make for a delicious and nutritious snack.
