2. Corn Bread

Corn bread is a wonderful alternative and, like quick breads, does not require rise time. Add various spices and vegetables to change up the flavor. Green chilies with Mexican Oregano and cotijo cheese make a great side for beans while tomatoes, mozzarella and basil gives a new spin for a polenta replacement.
