4. Nettles

Careful with Nettles, it is capable of stinging until cooked. Once cooked though, it’s not only delicious, but highly nutritious and offers a stunning yellow-green dye. Like many greens, Nettles has antioxidant abilities along with high iron content. If  you’re anemic, this is a good go-to plant to cook. The freeze-dried leaves are an excellent substitute for many of the prescription and over-the-counter allergy medications on the market. Again, seek medical attention before changing medications.
