4. Root Veggies

Throughout history root veggies were the staple for the poor and working class for sake of versatility and price. They are a good source of vitamins, fiber and protein. Some, like carrots, are a great raw veggie choice while others, like sweet potatoes, can be baked and eaten or mashed and mixed  into  breads, soups and even smoothies.
