04 Great Wheat-Free Breads
4. Rice Flour Crepes
My short life Gluten-free introduced rice flour to my kitchen. It’s a good wheat flour alternative because it works as a substitute in most recipes. These crepes can be enjoyed as a breakfast choice or rolled with veggies for Chinese mushu. There’s always room for bananas and chocolate for a delicious dessert as well. Simply mix 1 egg, 1 cup soy milk, 1 cup rice flour and 1 tablespoon oil. Pour the batter by ladlefuls on a hot-oiled skillet and spread it out quickly to form flat circles. Flip when the batter appears dry. The batter can have various spices and extracts added depending on the meal. Also, using coconut oil for oiling the pan offers some delicious flavor while adding healthier fat to your diet.
