3. Corn Tortillas
In Mexico, Central America and South American countries, corn tortillas are the standard not flour. They are easy to make and require no fat for preparation. Ingredients simply include ground corn meal, with enough warm water to form dough and salt for seasoning. The mixture is kneaded and rolled into flat cakes and heated on a hot skillet and then flipped. They can be fried in oil, but some time in the oven can also crisp them up nicely for tacos and tostadas making them healthier. Thicker disks with a lip around are known as sopas and are similar to tostadas but with a nice lip around to keep the ingredients from falling off.
